After reading the journal - yes they can be offended, hesitant and very self aware 
And apart from that people can be tricky to photograph out and about in life - sometimes they 'feel' that you are about to take a photo and their expressions change just as you press the shutter button whether you now them or not
I usually end up taking a bunch of photos in sequence just to make sure I get a good usable one. Little different I guess when you actually hire a model and you can get them to pose the way you want but even then I see photographers take shots over and over just for 1 usable photo.
Lastly something that works for me (especially when it;s not friends after you ask them nicely) is = be confident and they will be put at ease and pose more naturally, look nervous and they will be too
